...has been for a while, actually, but due to all-around icky weather and stuff, haven't done much. Grilled some sausages last night, which makes me think of...

Truckstop beans.

A side we always serve with any kind of Q or grillage, whether butt, ribs, dogs, burgers, or chicken. I adapted it from a recipe I saw on Diners, Drive-ins and Dives, combined with one out of that Crockin' Girls cookbook.

It is more of a method than recipe. Use what you prefer, and adapt amounts to feed your own crowd. It freezes well.

One large can baked beans
One can butter beans
One to two cans black, pinto, white, or kidney beans
One can tomato with pepper, any kind you prefer, stewed, diced with chillis, etc.
One large onion, chopped (sometimes I substitute equivelent amt. dried onion)
Fresh or frozen peppers, sliced or diced, any color, about a cup (I used tri-color frozen pepper strips here)
Healthy shake of BBQ seasoning
One-half cup each: brown sugar, BBQ sauce, ketchup (more or less according to taste)
Good squirt of mustard
Salt, pepper to taste
Whatever BBQ meat or bacon you have left over, cut into small pieces (here I used grilled sausages from the night before)
Optional: a pound or so of chopmeat, whether pre-browned or not

Throw everything into a crock pot, and cook on High 3-4 hours, or Low 4-6.

Hope you'll try it and like it!

As always, I disavow any knowledge of extra, un-necessary asterisks! ;p

It does look good. I have not grilled very much this year. Just some chicken and a few steaks once or twice this year. I am really overdue on talking to my local butcher to see if I can get some chuck eye. Closest thing to rib eye without the hefty price tag.

Man...does that look GOOD!

Smells that way, too. :-)

As far as I can recall, this is the only summer we will have to eat all three major q-fests indoors. The weather has really quelled our efforts.

Sailor - sorry about your weather woes!

I'm going to make these yummy beans this weekend using Andouille sausage and smoked peppercorn bacon.

Can't wait!!!

Sailor made me do it and yes I know there is a difference between BBQ and grilling.

Dammit! Now I'm hungry again!!!

We haven't BBQ ed, since we went camping in June. We did a slow cook on a Corned beef brisket and grilled some chuck steaks (London broils). Man they were good out in the fresh air!
