Are the nibs on a Parker 51 interchangeable between a Standard and a Demi size pen, or are there differences (in size) to the nibs? Not the tip, but the entire nib.

Yes 51 nibs are all the same size. In fact, you can adapt 61 nibs to fit 51 pens too. You have to flatten the little gold flap.
