I like Strathmore Calligraphy very much for corresondence. You used to be able to get matching #10 envelopes for it, but I can't seem to find them in this exact kind of paper (with the laid pattern) any more. You can get this paper at Dick Blick.

There's also Strathmore Parchment, which is more widely available (like at A.C. Moore and Hobby Lobby). The sheets are a lot thicker, though. More like something you'd use for certificates (though I have used it to write letters with, too). A pad contains different colored sheets:

I've used the Strathmore Parchment as well...and quite liked it. It is pretty heavy if one's letter is going to be more than 2 pages long or so.
