    Cool Food!

    So, I never really understood the fascination with, or the popularity of, the BLT - and probably only ever ate one in all my redacted years;
    however, that is until very recently... since I started curing my own bacon, the BLT has been the single most prominent use of the final product and could now actually be my favourite sandwich - I am now eating a lot more lettuce and tomatoes as a result, and have also become more fussy about sourcing and selecting those I use!

    Your bread is all wrong! A BLT needs texture in the form of whole grain toast IMHO.

    Okay, you asked for it. FOOD. I've been dropping photos into a digital folder named "Food" for years.

    First, some of you may recognize this chocolatier, who has a table at many of the big pen shows when he accompanies his colleague who sells wooden pens from adjacent tables. His creations are "very high end." I take a box home to SO when she hasn't come with me.

    Next, a farmer down the road from me grows strawberries and sells them from his field every June. The taste of the variety he sells are in a different league than those big bland berries imported from California. These must be eaten immediately; they spoil in 48 hours.

    Next to me is Adams County, famous not only for Gettysburg but also orchards of apples and peaches. It's peach season, too. They are soooo good right now!

    There is a Lutheran church in a village not far from my house that has sales of pies and cakes. It's not my kind of eating, but I had to take a photo.

    Lately, barbecue restaurants, stands and trucks have been popping up everywhere. This sandwich is long-smoked pulled pork barbecue topped with cole slaw (a cabbage salad) on a kaiser roll.

    Thank you for motivating me to get out into the country and buy some local strawberries instead of the organic stuff from California on the shelves at Whole Paycheck.

    And on the subject of Whole Foods, a handwritten letter went to Jeff Bezos this afternoon about some of WP's pricing policies.

    I highly recommend the Lahey no-knead method. Its simplicity appeals to my laziness and lack of skill. (The links being drawn between commercial bread additives and gluten intolerance are also worth considering. https://www.theguardian.com/lifeands...h-about-gluten)

    A favorite recipe. Zucchini casserole. A simple mix of cooked zucchini (my English wife calls it "marrow"), eggs, mayonnaise, lots of fresh grated parmesan cheese, green bell pepper, onion and bread crumbs on top, baked for 40 minutes. Eaten hot or cold. I'll be making another today.

    And finally, a disgusting creation a local supermarket thinks customers want to eat. I suppose this is good reason not to take young children anywhere near the bakery department.

    No no no, BLT 'should' be with Croxley method sliced white bread. However ..... - try it with a decent sour dough - and hellmans

    Try Heinz's 'seriously good' mayo; I prefer 'posh' mayonnaise but the Heinz is a good value alternative and should get a design award for the jar and it's ease of access to the contents. I like sourdough too but prefer plain white farmhouse for most sandwiches, although I am rather partial to an olive ciabatta ;P

    Seriously, 12 pheasant breasts for £3; yup, they're coming home with me, even if they ain't 'suitable' for home freezing.

    Must be magic, I just happened to have some fat in the fridge {mostly duck, some bacon, and some beef, plus olive and vegetable oil - it's been used and developed over a few outings}...

    Not sure about the South African marinade they were already treated with - Rooibos and some herbs etc, i'm not sure - but besides the fat, they bathed in white rum and peach n apricot jam

    Lightly roasted skewered peach slices with cinnamon and glaze. Someone brought them to a picnic last weekend at Lake Canadarago, New York, USA.
