    Ta! I did a search as well and it's a big thing in Finland, where birch is the commonest tree. Here in the northcentral Rockies, our only native birch is Copper or River Birch, which grows on streambanks. Pretty tree.

    We live on a river, but I think it's too cold here for the species.

    I don't know, but we used to get it when I was a kid. Teenager, that is. As I recall, similar to root beer, but clear rather than brown, and more intense. 'Ma's Birch Beer' was the brand.

    Summers are nostalgic for me; they represented beaches, visiting, freedom and relaxation. Now, it seems all we do is yard work, house work, and more yard work.

    Did a search. I thught that perhaps birches (like maples) were tapped and the sugary sap fermented, but it seems that birch bark and twigs are most often boiled or soaked and sugar is added to the resulting infusion.

    Next time I'm in a city, I'll look for it.

    The Russians drink Birch juice where the trees are tapped as you describe. I haven't seen it sold there as fermented though.

    I've rediscovered whisky (or whiskey) and soda, with a handful of ice.

    Particularly nice with a good Irish blend. The bubbles waft the aroma up.

    I usually settle for water, but if I want something else I can have a mango or orange juice with little sugar.

    Sorry for the late reply, but I just saw your post and decided to drop in. Gin and tonic is definitely a classic summer choice! Your Pernod sounds intriguing, especially with its interesting history. I personally love a refreshing shandy on hot days too - mixing beer or ale with lemonade or fruit juice is a perfect combo. Also, I prefer pairing my favorite summer drinks with some delicious pub food near me, which adds an extra layer of enjoyment and makes for a fantastic time. There's nothing like savoring a refreshing drink while indulging in tasty bites. It's the perfect recipe for a memorable and enjoyable summer.

    First time I had a shandy was on a 40 ft. sloop crossing the Hauraki Gulf to Auckland. The owner and his first mate were WWII British marines, oldtime yachties, and keen on a shandy or two for a hot day.

    My favourite combo is amber ale and grapefruit juice or limeade.

    - Seltzer. So much better than the lightly carbonated versions like Perrier.

    - Margarita. We've settled on Hornito's Resposado for the tequila and Jose Cuervo mix. I know, I know. I should make my own mix using someone's "best possible recipe" and exotic ingredients, but we get impatient.

    Surprised that no one has mentioned a "tinto de verano", that is a "summer red wine": 50% cheap red wine and 50% 7up or Sprite and a wee bit of lemon juice served over ice. Delicious and refreshing.

    AKA wine cooler. They were the rage about ten years ago, but have given way to spiked seltzer among the younger set.

    I like a shandy (half beer or ale, half fruit juice or lemonade), a habit I picked up from sailing mates in New Zealand. In my case, amber ale and grapefruit juice.

    Reminds me of German radler (half bier, half sprite), but now that I’m thinking about it the Italians and their limoncello is probably close to the perfect summer drink.

    Oh, the pain from a Pernod hangover has a level second to none.
    Many years ago, when stationed in Germany, a weekend was never complete without drinking at least a quarter of a bottle of 'Pernod and Black' (Pernod with Blackcurrant cordial) in the Barrack room. This was the pre-cursor to the starting off of a 'guard duty' free weekend. In the local pub it would be a nice cold lager and then, once we had arrived in the mandatory nightclub, the 'Pernod and Black' made way for the Pernod and 'flat coke'. Don't know about now, but back in the day in Germany, when you asked the barman for a Bacardi and Coke, Whiskey and Coke or similar with 'Short' with Coke, there was two types of coke. The sparkling/bubbly kind (as in the red coke tins type), or the coke served in shorts (spirits), which was the same coke, but it was flat (no bubbles). That was the drink of the night(s) on Friday and Saturday. Pernod and flat coke, served in schooners. Vicious hangover with that stuff most of Sunday.

    I hope you have enjoyed many bottles of Pernod since you first posted this thread, Chip.

    Actually, I've yet to get a bottle for the summer. I mix it with water or a bit of club soda.

    I've tried cassis (blackcurrant liqueur) with soda, or in a cocktail with white wine (kir?)

    Probably too civilised for the like of me. . .
