    Ta! I did a search as well and it's a big thing in Finland, where birch is the commonest tree. Here in the northcentral Rockies, our only native birch is Copper or River Birch, which grows on streambanks. Pretty tree.

    We live on a river, but I think it's too cold here for the species.

    I don't know, but we used to get it when I was a kid. Teenager, that is. As I recall, similar to root beer, but clear rather than brown, and more intense. 'Ma's Birch Beer' was the brand.

    Summers are nostalgic for me; they represented beaches, visiting, freedom and relaxation. Now, it seems all we do is yard work, house work, and more yard work.

    Did a search. I thught that perhaps birches (like maples) were tapped and the sugary sap fermented, but it seems that birch bark and twigs are most often boiled or soaked and sugar is added to the resulting infusion.

    Next time I'm in a city, I'll look for it.

    grew up with birch beer, I think it was a Pennsylvania Dutch branded thing. delicious.

    The Russians drink Birch juice where the trees are tapped as you describe. I haven't seen it sold there as fermented though.
