Hmm, what brands do you know of so none of us repeat them? What's known may vary from person to person.
To state the obvious and add maybe:
Rhodia
Clairefontaine
Apica
and recently I discovered that the paper sold at Muji is pretty darn good.
I love Fabriano Mediaevalis watercolor paper. That make ones that are perfect size for making cards and postcards, and also have envelopes.
Strathmore watercolor paper is nice for drawing with fountain pen ink
I also liked the Holbein drawing books. Not sure if they are still an item on the market.

If I need to write a nice letter, Basildon Bond writing paper is a treat. Fantastic paper for double sided writing with fountain pen ink, in champagne and white. They do matching envelopes too.

Paper-Oh! Staples Sugar Cane copy paper, HP laser paper, onion skin paper (vintage is the coolest). A semi-gloss photo paper I discovered that is very fountain pen friendly but I have no idea what the brand is. Luckily I have reams of it. Folofax paper can be fountain pen friendly but it is hit or miss. RayMay is good and I think it is Tomoe River. Life paper is really good too.

Believe it or not, the Dollar General "made in Indonesia" pads are fountain pen friendly. $1 each.
I like Miquelrius as well. Not too pricey and they do the job quite well.

Franklin Christoph has some proprietary sugar cane paper that is FP friendly.
I found the Staples brand composition books are pretty good, as long as you do not use flex or excessively wet pens. 25 cents each seems more than reasonable.

I like Fabriano EcoQua (dot pad), Black & Red Optik (lined), and Strathmore Writing (blank)
The Strathmore has a nice vintage off-white look, and is a bit toothier, but handles my fountain pen inks quite well.
The Fabriano is smoother and has a slightly tighter dot spacing than Rhodia. I use the every-other-line technique with it.
The Red & Black is nice and smooth, line spacing is big enough for me to use a broad nib.
None of these are super expensive, and I have found local sources for all of them (unlike Rhodia)

I use a fountain pen for daily use and normally use Noodlers X Feather in cheap A4 notebooks and it works well. I have bought Clairefontaine only to find out that it doesn't like Noodlers at all! I can only use my Diamine ink with it which is not bulletproof and so there is a risk of accidents with water and coffee. I have given up on the paper game now and just use what is at hand though I love Clairefontaine writing paper and Tomoe River though it is a bit too thin for me and does ghost (have a journal with it)
Vintage onionskin. You can only use one side of it, but it makes a delicious crinkling sound and is "fluffy" to the touch.
